I have cooked this lots of times so Let me tell you the Secrets of Authentic Epirus Cousine ..
Simple Guidance :
Ingredients :
2 chickens cut in bantlings
2 oranges squized
1 glass of dry red wine
1 small glass of balsamic vinegar
4 shallots, chopped
1/2 glass of Olive oil
Needed also :
Honey
oregano
How to Start :
Add the olive oil on the Sheet.
Lets Start Now...
1. Wash very Well the piecies of Chopped Chicken.
2. Get a small Bowl and Fill it with the Vinegar.
3. Dip the piecies of Chicken on it.
4. arrange the pieces on the Sheet
5.Add and stur Honey with the Orange Juice and Dry Red Wine on all over the Chicken
6.Mix the ingredients with the 4 Shallots Chopped and the Chicken.
7. Salt the Chicken , And add a Tinny bit of Pepper.
8. Drop the Oregano on top of the Chicken.
How to Grill THe Chicken :
Start with 150 Degrees .. for 15 minutes.
5 minutes After 200 and
10 minutes 250
This Plate is Excellent to be Served with Pasta ....
After Pulling out the Chicken then Add the Boild Pasta cold...
When Serving the Chicken use grated cheese on top of the Chicken and pasta
Reccomended grated Cheese to Serve :
- I Prefere Greek Graviera of Naxos...
- Kefalotyri any kind
